TERRA D’OTRANTO
Our extra virgin olive oil has a fruity taste with some light bitter and spicy aroma and is light yellow with green shades. It’s perfect for pasta, vegetables and legumes, while also great used with secondo courses (or any other courses, in fact). Extra virgin is the highest quality olive oil with a free acidity below 0.8%, the result of direct collection of the fruit from the trees onto nets followed by local extraction of the oil, solely by mechanical means and at a low temperature (‘cold pressed’), within a few hours of the harvest.
Casa Sei oil enjoys the characteristics that define Terra d’Otranto, one of Italy’s 42 protected designations of origin for extra virgin olive oil: Our trees are a mix of Cellina di Nardo and Ogliarola Salentina varieties (both ancient and native to the region) and the process from branch to bottle all happens in the same locality. This oil type contains a very high level of polyphenols that are presumed to be natural antioxidants, so it’s fair to assume that there is even more to commend this oil than great taste and happy provenance.
